This is a tummy warmer. My dh doesn't care for squash all that much but he likes this stew. It has a lot of vitamin A.
I don't measure anything, so please bear with me.
This will feed a big family. Get out the big stock pot. Soak some Great Northern beans in vinegar or whey overnight to take out the windiness. Then rinse them and place them in the stock pot with enough water to cover. Bring to a boil, turn down the heat, and simmer with chopped garlic, celery and onion, a ham or beef bone. Bake at around 350 a butternut squash that has been cut in half and the halves placed face down in a little water in a pan. When the beans are tender, add some salt and mild seasonings. Take out the bone. Pour out half the water, replace half of what you poured out with milk. After it simmers almost an hour, the squash will be tender and soft to the touch, like a baked potato. Take off the squash skin and any stringy stuff and mash up the squash. Put the mashed squash into the soup. Put some butter and cream or half and half in there at the last part of cooking. Top with a dollop of sour cream and a sprinkle of cinnamon.
