Leg of lamb
Fresh rosemary
Salt
Cayenne pepper
Olive oil
Roasting pan
Water

This recipe is simplicity in itself.
Put about one half inch water in the pan. Wash and oil the leg of lamb and place in the pan. Ad seasoning and rosemary sprigs. Roast at around 400 degrees for about 15 minutes to seal in the juices. Reduce heat to around 365 and bake for about an hour. Pour drippings over the lamb and cook some more until the juices run clear when you poke the roast with a fork.

Serve with tzatziki sauce, lentils and rice, and plain yogurt. Garnish with a sprig of mint.
