Made this last night, again. It's a staple here.
Used left over Xmas ham this time.
Good food served with corn bread. Nice when your cold and soggy!

Lima Bean and Bacon soup
1# bacon (pork or turkey, I’ve used both)
1 ½ t salt
2 cloves garlic, crushed
1 bay leaf
3 cups dried lima beans
½ t ground cloves
1 or 2 onions, chopped
As many carrots as you want, chopped

Boil beans for 2 minutes, then soak for 1 hour, drain.
Cook meat, add next 4 ingredients and as much water as you want, simmer for 1 ½ hours or so.
Might have to keep adding water now and again.
Add the rest of ingredients, simmer for 1½ or until beans are soft.

It so happens there are bags of lonely limas around here looking for work. I know what to make for dinner tonight. Thanks, Kris!
